Butternut Squash Pasta
(serves 2 – 4)
1 butternut squash
4-5 button mushrooms
3-4 leaves of basil
extra virgin olive oil
To make the pasta:
spiralize the squash into noodles and sprinkle salt on top.
Let sit for 10 minutes to soften the noodles.
(rinse the noodles after, they will be salty)
Mix with extra virgin olive oil, balsamic vinegar, + seasonings of choice.
Add tomatoes, mushrooms, and chopped basil.
Served on a bed of spinach, topped with nutritional yeast.
Raw lemonade smoothie
1 cup water
1 lemon (peeled but if it’s organic use one tablespoon of lemon peel)
1 ripe banana
1/3 cup dates (medjool dates are my favourite. Remove the pits of course!)
1/2 stalk celery or a handful of parsley
1. Throw all raw lemonade smoothie ingredients in blender and blend away until smooth!
Remember that you should always put the softest ingredients, such as bananas, in first. That way they’re close to the blender’s blade and make it easier to blend.
If you don’t have a high-speed blender (such as a VitaMix) I might leave out the celery because celery is kind of stringy if not blended well. Also, if you don’t have a high-speed blender make sure your dates are soft. If you have really hard dates, soak them in warmish water for half-an-hour or so.
An update on Heidi Ho Veganics Chia Cheeze Sauce:
It. Is. Delicious! When my order came in I had to try it immediately (naturally). So for lunch I packed a whole wheat tortilla wrap with chard, pinto beans, avocado, and a little bit of chia cheeze and was impressed by how tasty it was. I haven’t tried melting it yet, but within the next few days I plan on throwing together some vegan nachos and testing it out. Also, it’s made out of chia so it’s packed with protein and it’s totally clean! Who could ask for better out of a vegan cheese?
Has anyone else tried products from this company? I would love feedback before I place an order!
